Bean Alfredo Sauce


  • ½ cup cooked unsalted navy beans (or use cannellini beans)
  • ½ cup blanched almonds or cashews
  • 1 tbsp salt
  • 2 tbsp lemon juice
  • ¼ cup nutritional yeast
  • 2 tbsp cornstarch
  • 2 tbsp olive oil
  • ¼ medium raw onion
  • ½ tsp minced garlic
  • 2 cup water


  • Liquefy all ingredients. Heat until thickened.


Try adding a can of mushrooms to the mixture after blending, or add fresh mushrooms. Sprinkle with chives.
