Carob Cake

Ingredients:

  • 1 2/3 cups whole wheat pastry flour (or unbleached combination)
  • 1 cup Sucanat
  • 3 tbsp carob powder
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 cup water
  • 1/3 cup canola oil
  • 1/2 tsp vanilla

Directions:

  1. Preheat oven to 350F. Mix flour, Sucanat, carob powder, salt and baking powder in a large bowl.
  2. In a separate bowl mix the oil, water and vanilla.
  3. Combine the wet and dry ingredients until most lumps have disappeared. Pour into grease square pan 8″ x 8″ x 2″ Bake immediately. Bake until toothpick inserted in center comes out clean, about 35 to 40 minutes.
