Spanish Rice Bake


1 tsp onion powder

1 28-oz. can tomatoes

1 cup quick brown rice

1 tsp Chicken-Style Seasoning

1/2 tsp salt

2 2 1/4-oz. can olives


1. Heat the tomatoes in a large saucepan. Add the rice and seasonings and simmer for ten minutes, covered. Add some water if it becomes dry.

2. Add the olives. Check the seasoning. Place in a 9″ x 11″ casserole dish and bake at 350F for 35 minutes.


Add some gluten or seasoned tofu cubes if desired. You may also like to add some diced green pepper for a different flavor.
