Ted's Vegan Bread
Ingredients
- 5½ cup warm water 100-105°F
- 3 cup whole wheat flour
- ½ cup oil
- ½ cup honey alternative
- ½ cup vital wheat gluten
- 2 tbsp active dry yeast
- ½ cup soy flour
- ½ cup wheat germ
- 1 tbsp lemon juice
- 1 tbsp salt
- 1 cup white flour
Instructions
- Place the warm water and 3 cups flour in the Bosch bowl and mix briefly.
- Add the oil, honey, vital gluten, yeast, soy flour, wheat germ, lemon juice, and salt. Mix briefly and then add one cup white flour.
- Mix until dough pulls away from the sides of the bowl and is the desired consistency.
- Add whole wheat flour until right consistency. (This can be a lot of flour. It should not be sticky to touch)
- Knead five minutes. Form into five loaves. Place in pans and cover to rise. Bake at 350F for 30 minutes. It is done when a toothpick comes out clean.
- Remove from pans promptly.
