A good, filling loaf. Perfect for avocado toast or a vegan sandwich.
When the bread is baked, spray lightly with water for a soft crust.
Place the warm water and 3 cups flour in the Bosch bowl and mix briefly.
Add the oil, honey, vital gluten, yeast, soy flour, wheat germ, lemon juice, and salt. Mix briefly and then add one cup white flour.
Mix until dough pulls away from the sides of the bowl and is the desired consistency.
Add whole wheat flour until right consistency. (This can be a lot of flour. It should not be sticky to touch)
Knead five minutes. Form into five loaves. Place in pans and cover to rise. Bake at 350F for 30 minutes. It is done when a toothpick comes out clean.
Remove from pans promptly.
