Mix the oil, sugar, apple juice concentrate, bananas and vanilla in a mixing bowl.
In another mixing bowl mix the flour, egg replacer, salt, and baking powder together.
Mix the wet and dry ingredients together and stir in the nuts. Spoon into mini bread pans and bake at 350F for about 45 minutes, or until starting to brown.
