Vegan Banana Bread
This soft banana bread is great with any meal. Keep a loaf in the freezer for those unexpected guests and serve it with a banana date shake!
¾ cup canola oil 1 cup date sugar or sucanat ½ cup apple juice concentrate 2 cup mashed bananas ½ tsp vanilla 3 cup flour 2 tsp ener-G egg replacer 1 tsp salt 3 tsp baking powder 3 cup chopped nuts depending on taste (optional)
Mix the oil, sugar, apple juice concentrate, bananas and vanilla in a mixing bowl. In another mixing bowl mix the flour, egg replacer, salt, and baking powder together. Mix the wet and dry ingredients together and stir in the nuts. Spoon into mini bread pans and bake at 350°F for about 45 minutes, or until starting to brown.
