This caramel corn makes a great party treat.
- 2 quarts popped corn
- 1 cup mixed raw almonds and pecan halves
- 1 cup shredded coconut
- 1/4 cup canola oil
- 1 cup honey alternative
- 1/2 tsp ground coriander
- 1 Tbsp grated orange peel
- Spray an 11″ x 17″ roasting pan with PAM. Put the popcorn, nuts, and coconut in the pan.
- Boil the oil, honey, coriander and orange peel over medium heat, stirring constantly for one minute. Drizzle over popcorn mixture and stir to blend. Bake uncovered at 350F for 15-20 minutes. Stir every five minutes.
May form into popcorn bowls when mixture is still very hot.
