Vegan Caramel Corn

This caramel corn makes a great party treat.

Ingredients
  

  • 2 qt popped corn
  • 1 cup mixed raw almonds and pecan halves
  • 1 cup shredded coconut
  • ¼ cup canola oil
  • 1 cup honey alternative
  • ½ tsp ground coriander
  • 1 tbsp grated orange peel

Instructions
 

  • Spray an 11" x 17" roasting pan with PAM. Put the popcorn, nuts, and coconut in the pan.
  • Boil the oil, honey, coriander and orange peel over medium heat, stirring constantly for 1 minute. Drizzle over popcorn mixture and stir to blend. Bake uncovered at 350°F for 15-20 minutes. Stir every 5 minutes.

Notes

Tips: 
May form into popcorn bowls when mixture is still very hot.
