Vegan Caramel Corn

This caramel corn makes a great party treat.

Ingredients:

  • 2 quarts popped corn
  • 1 cup mixed raw almonds and pecan halves
  • 1 cup shredded coconut
  • 1/4 cup canola oil
  • 1 cup honey alternative
  • 1/2 tsp ground coriander
  • 1 Tbsp grated orange peel

Directions:

  1. Spray an 11″ x 17″ roasting pan with PAM. Put the popcorn, nuts, and coconut in the pan.
  2. Boil the oil, honey, coriander and orange peel over medium heat, stirring constantly for one minute. Drizzle over popcorn mixture and stir to blend. Bake uncovered at 350F for 15-20 minutes. Stir every five minutes.

Tips: 

May form into popcorn bowls when mixture is still very hot.
