Vegan Granola


  • 9 cups quick oats
  • 2 cups coconut
  • 1 1/2 cups pecan meal
  • 1 1/2 cups whole wheat flour
  • 1 1/4 cups slivered almonds
  • 1 1/2 tsp salt
  • 3/4 cup date sugar
  • 2 cups water
  • 1 1/4 cups maple syrup
  • 3 tsp vanilla
  • 3/4 cup oil


  1. Mix the oats, coconut, pecan meal, flour, almonds, salt and date sugar, together in a large bowl.
  2. Mix the water, vanilla, maple syrup and oil together in a separate bowl. Whisk until fluffy.
  3. Mix wet and dry ingredients together thoroughly. Spread evenly on four large cookie sheets.
  4. Bake at 200F for 2-3 hours. Switch trays and stir occasionally. May set oven on 150F and bake overnight.
