Vegan Granola
Ingredients
- 9 cup quick oats
- 2 cup coconut
- 1½ cup pecan meal
- 1½ cup whole wheat flour
- 1¼ cup slivered almonds
- ¾ cup date sugar
- 2 cup water
- 1¼ cup maple syrup
- 3 tsp vanilla
- ¾ cup oil
Instructions
- Mix the oats, coconut, pecan meal, flour, almonds, salt and date sugar, together in a large bowl.
- Mix the water, vanilla, maple syrup and oil together in a separate bowl. Whisk until fluffy.
- Mix wet and dry ingredients together thoroughly. Spread evenly on 4 large cookie sheets.
- Bake at 200°F for 2-3 hours. Switch trays and stir occasionally. May set oven on 150°F and bake overnight.
