Vegan Leek And Potato Soup
Ingredients
- 1½ cup sliced leeks
- 2 cup cubed potatoes
- olive oil
- 3 cup vegetable stock or water and veggie seasoning to taste Broth Base would also work
- salt to taste
- ½ cup thick soy milk
- chives to garnish
Instructions
- Heat the olive oil gently in a small pan. Add the leeks and cook until soft. Add the vegetable broth and then add the potatoes. Cook until the potatoes are soft.
- Add the seasonings. Blend all in the blender and add the milk, blend some more. Return to the stove, warm through and serve with chives sprinkled on top.
