Vegan Leek And Potato Soup

Creamy hearty vegan soup just the thing to warm a person up.

1 ½ cups sliced leeks
2 cups cubed potatoes
olive oil
3 cups vegetable stock or water and veggie seasoning to taste
salt to taste
½ cup thick soy milk
chives to garnish


Heat the olive oil gently in a small pan. Add the leeks and cook until soft. Add the vegetable broth and then add the potatoes. Cook until the potatoes are soft.

Add the seasonings. Blend all in the blender and add the milk, blend some more. Return to the stove, warm through and serve with chives sprinkled on top.
