Vegan Mandarin Jell-O Dessert
- 2 11-oz mandarin sections, can
- 2½ cup boiling water
- 1½ cup mandarin flavored gelatin
- juice from mandarin sections plus water to make 3⅓ cups
- Drain mandarins and set aside juice.
- Stir the Emes gelatin and boiling water until dissolved.
- Add the mandarin juice and the rest of the water. Pour into a pan and chill until partially set.
- Add the mandarin sections and chill completely.
