Vegan Pecan Pie
Ingredients
- 1 cup water
- ½ cup soy milk powder
- ⅓ cup cashews
- ⅔ cup seedless dates
- ¼ tsp salt
- 1 tsp vanilla
- 1 tsp lemon juice
- ¼ cup honey alternative
- ¼ cup maple syrup
- 1 tbsp cornstarch
- 1 cup pecans
Instructions
- Liquefy all the ingredients together except the whole pecans. Pour into an unbaked pie shell. Arrange the whole pecans on top. Bake 1 hour at 350°F. Cover with foil for the last 15 minutes to stop from browning too much. (Sometimes it takes longer to bake).
