Vegan Rice Crispy Treats, Bars
Ingredients
- 2 cup honey alternative maple syrup works well
- 2 cup Peanut butter
- 1 tbsp vanilla
- 1 tbsp carob powder or vegan cocoa powder to taste (optional)
- 6 cup unsweetened crispy rice cereal (1 box)
Topping suggestions:
- vegan icing frosting made with powder sugar
- vegan nutella
- walnut butter, salted caramel
- maple nut butter
Mix-in Ideas:
- vegan chocolate chips
- vegan m&ms
- Vegan peanut butter pieces
- whole peanuts
- cocoa nibs
- coconut
Replacement ideas:
- Instead of vegan honey. Maple syrup, or agave nectar
- Instead of carob. Cocoa powder, vegan chocolate chips, cocoa nibs
- Instead of peanut butter. Hazelnut spread, vegan nutella, almond butter, or cookie butter
Instructions
- Add nut butter to the pan.
- Add the honey alternative, vanilla and carob powder in a kettle.
- Heat the mixture until warm and runny.
- Pour honey nut butter mixture over cereal.
- Evenly coat cereal, mix well. Press into sprayed pan. Chill. Cut into 2" x 2" squares.
