Vegan Tapioca Pudding



  • Whisk all ingredients together in a heavy saucepan, except vanilla.
  • Let stand 10 minutes. Cook over medium heat, stirring constantly, just until it starts to thicken. Remove from heat and stir in the vanilla.
  • Cool in a saucepan for 30 minutes; it will thicken considerably. Serve warm or chilled.
