Vegan Tapioca Pudding
Ingredients
- 2½ cup non-dairy milk
- ⅓ cup florida crystals
- ¼ cup minute tapioca
- 1/8 tsp salt
- 2 tbsp honey alternative
- 1 tbsp vanilla
Instructions
- Whisk all ingredients together in a heavy saucepan, except vanilla.
- Let stand 10 minutes. Cook over medium heat, stirring constantly, just until it starts to thicken. Remove from heat and stir in the vanilla.
- Cool in a saucepan for 30 minutes; it will thicken considerably. Serve warm or chilled.
