Vegan Zucchini Couscous

A delicious light meal for summertime fare. Imagine picking some tender zucchini from your garden or a farmers market for this wholesome dish.

Ingredients
  

  • 2 medium zucchini sliced
  • 1 small onion
  • 3 cup water or veg stock with your favorite seasonings
  • 2 cup couscous
  • 2 tbsp olive oil
  • salt to taste

Instructions
 

  • Cut the onion in wedges. Place in large frying pan or wok. Heat gently in the olive oil until the onion is transparent.
  • Add the water or stock. Add the zucchini. Cook until the zucchini is tender. Add your favorite seasonings. (I like to use a few tbsp of Chicken Style Seasoning and some Herbamare)
  • Add the couscous. Cook until all the water is absorbed. Taste. If the couscous is a little chewy add some more water and keep tossing over medium heat.

Notes

Tips
Add any other vegetables you like. Sliced carrots work great. Try adding mushrooms!
