Vegan Zucchini Couscous
- 2 medium zucchini sliced
- 1 small onion
- 3 cup water or veg stock with your favorite seasonings
- 2 cup couscous
- 2 tbsp olive oil
- salt to taste
- Cut the onion in wedges. Place in large frying pan or wok. Heat gently in the olive oil until the onion is transparent.
- Add the water or stock. Add the zucchini. Cook until the zucchini is tender. Add your favorite seasonings. (I like to use a few tbsp of Chicken Style Seasoning and some Herbamare)
- Add the couscous. Cook until all the water is absorbed. Taste. If the couscous is a little chewy add some more water and keep tossing over medium heat.
