Vegan Zucchini Couscous

A delicious light meal for summertime fare. Imagine picking some tender zucchini from your garden or a farmers market for this wholesome dish.


Add any other vegetables you like. Sliced carrots work great. Try adding mushrooms!

2 medium zucchini, sliced
1 small onion
3 cups water or veg stock with your favorite seasonings
2 cups couscous
2 tbsp olive oil
salt to taste


Cut the onion in wedges. Place in large frying pan or wok. Heat gently in the olive oil until the onion is transparent.

Add the water or stock. Add the zucchini. Cook until the zucchini is tender. Add your favorite seasonings. (I like to use a few Tbsp of Chicken Style Seasoning and some Herbamare)

Add the couscous. Cook until all the water is absorbed. Taste. If the couscous is a little chewy add some more water and keep tossing over medium heat.
