Verna Vegan Oatmeal Squares

If you’re looking for a quick easy breakfast as you run out the door or a no-fuss snack these vegan oatmeal squares will give you the energy you need to power through the day. Prepare this plant-based oatmeal square recipe on the weekend and you will have enough for the week ahead.

Verna Vegan Oatmeal Squares 1


Try adding a few dried cranberries or apricots. Wait until cool to cut into squares or it will crumble more easily.


4 cups quick oats
1 cup coconut
1 ½ cups whole wheat flour
1 cup brown sugar or Sucanat
1 tsp salt
2 tbsp flax seeds (optional)
1 cup raisins or dates
1 cup chopped nuts
1 cup nut butter
¾ cup water
¼ cup canola oil


Mix all ingredients together, be ready to get your hands in there.

Put into an oiled pan approx 1/2″ thick and push down with your hands and then smooth it out with a flat serving spoon.

Bake for 35 minutes at 350F.
