Verna Vegan Oatmeal Squares
If you're looking for a quick easy breakfast as you run out the door or a no-fuss snack these vegan oatmeal squares will give you the energy you need to power through the day. Prepare this plant-based oatmeal square recipe on the weekend and you will have enough for the week ahead.
- 4 cup quick oats
- 1 cup coconut
- 1½ cup whole wheat flour
- 1 cup brown sugar or sucanat
- 1 tsp salt
- 2 tbsp flax seeds (optional)
- 1 cup raisins or dates
- 1 cup chopped nuts
- 1 cup nut butter
- 1 cup carob chips or vegan chocolate chips
- ¾ cup water
- ¼ cup canola oil
Mix all ingredients together, be ready to get your hands in there.
Put into an oiled pan approx ½" thick and push down with your hands and then smooth it out with a flat serving spoon.
Bake for 35 minutes at 350°F.
Tips
Try adding a few dried cranberries or apricots. Wait until cool to cut into squares or it will crumble more easily.
