Vegan Apple Crisp
Apple crisp is a delicious, light, and easy dish. It makes a great breakfast treat, or try it with custard for a scrumptious dessert!
- 1½ oz can apple juice concentrate
- 2 tbsp lemon juice
- ½ tsp ground coriander
- ¼ tsp ground cardamom
- ¼ cup cornstarch mixed with ¼ cup water
- 8 cup sliced, cored apples
- ½ cup raisins
Heat apple juice, lemon juice, cardamom and coriander in a large kettle. Stir in the cornstarch mixture, stirring constantly until thickened.
Add the sliced apples to the thickened apple juice mixture. Stir in the raisins. Cook two to three minutes stirring constantly.
Place in pan and top with Crumb Topping. Bake at 350°F for about 45 minutes. (The Crumb Topping recipe is in the breakfast section)
Tips
Golden delicious apples work best.
Add a scoop of vanilla vegan ice cream a top of a slice, serve while the pie is warm.
