Vegan Apple Crisp

Apple crisp is a delicious, light, and easy dish. It makes a great breakfast treat, or try it with custard for a scrumptious dessert!

Ingredients
  

  • oz can apple juice concentrate
  • 2 tbsp lemon juice
  • ½ tsp ground coriander
  • ¼ tsp ground cardamom
  • ¼ cup cornstarch mixed with ¼ cup water
  • 8 cup sliced, cored apples
  • ½ cup raisins

Instructions
 

  • Heat apple juice, lemon juice, cardamom and coriander in a large kettle. Stir in the cornstarch mixture, stirring constantly until thickened.
  • Add the sliced apples to the thickened apple juice mixture. Stir in the raisins. Cook two to three minutes stirring constantly.
  • Place in pan and top with Crumb Topping. Bake at 350°F for about 45 minutes. (The Crumb Topping recipe is in the breakfast section)

Notes

Tips
Golden delicious apples work best.
Add a scoop of vanilla vegan ice cream a top of a slice, serve while the pie is warm.
