Spanish Rice Bake


  • 1 tsp onion powder
  • 1 28-oz tomatoes, can
  • 1 cup quick brown rice
  • 1 tsp chicken-style seasoning
  • ½ tsp salt
  • 2 2¼-oz olives, can


  • Heat the tomatoes in a large saucepan. Add the rice and seasonings and simmer for 10 minutes, covered. Add some water if it becomes dry.
  • Add the olives. Check the seasoning. Place in a 9" x 11" casserole dish and bake at 350°F for 35 minutes.


Add some gluten or seasoned tofu cubes if desired. You may also like to add some diced green pepper for a different flavor.
