Vegan Caramel Corn
This caramel corn makes a great party treat.
- 2 qt popped corn
- 1 cup mixed raw almonds and pecan halves
- 1 cup shredded coconut
- ¼ cup canola oil
- 1 cup honey alternative
- ½ tsp ground coriander
- 1 tbsp grated orange peel
Spray an 11" x 17" roasting pan with PAM. Put the popcorn, nuts, and coconut in the pan.
Boil the oil, honey, coriander and orange peel over medium heat, stirring constantly for 1 minute. Drizzle over popcorn mixture and stir to blend. Bake uncovered at 350°F for 15-20 minutes. Stir every 5 minutes.
Tips:
May form into popcorn bowls when mixture is still very hot.
