Mix the oats, coconut, pecan meal, flour, almonds, salt and date sugar, together in a large bowl.
Mix the water, vanilla, maple syrup and oil together in a separate bowl. Whisk until fluffy.
Mix wet and dry ingredients together thoroughly. Spread evenly on 4 large cookie sheets.
Bake at 200°F for 2-3 hours. Switch trays and stir occasionally. May set oven on 150°F and bake overnight.
