Vegan Granola

Ingredients
  

  • 9 cup quick oats
  • 2 cup coconut
  • cup pecan meal
  • cup whole wheat flour
  • cup slivered almonds
  • ¾ cup date sugar
  • 2 cup water
  • cup maple syrup
  • 3 tsp vanilla
  • ¾ cup oil

Instructions
 

  • Mix the oats, coconut, pecan meal, flour, almonds, salt and date sugar, together in a large bowl.
  • Mix the water, vanilla, maple syrup and oil together in a separate bowl. Whisk until fluffy.
  • Mix wet and dry ingredients together thoroughly. Spread evenly on 4 large cookie sheets.
  • Bake at 200°F for 2-3 hours. Switch trays and stir occasionally. May set oven on 150°F and bake overnight.
