Vegan Banana Bread

This soft banana bread is great with any meal. Keep a loaf in the freezer for those unexpected guests and serve it with a banana date shake!

Ingredients
  

  • ¾ cup canola oil
  • 1 cup date sugar or sucanat
  • ½ cup apple juice concentrate
  • 2 cup mashed bananas
  • ½ tsp vanilla
  • 3 cup flour
  • 2 tsp ener-G egg replacer
  • 1 tsp salt
  • 3 tsp baking powder
  • 3 cup chopped nuts depending on taste (optional)

Instructions
 

  • Mix the oil, sugar, apple juice concentrate, bananas and vanilla in a mixing bowl.
  • In another mixing bowl mix the flour, egg replacer, salt, and baking powder together.
  • Mix the wet and dry ingredients together and stir in the nuts. Spoon into mini bread pans and bake at 350°F for about 45 minutes, or until starting to brown.
