Carob Cake

Ingredients
  

  • 1⅔ cup whole wheat pastry flour (or unbleached combination)
  • 1 cup sucanat
  • 3 tbsp carob powder
  • ½ tsp salt
  • 2 tsp baking powder
  • 1 cup water
  • cup canola oil
  • ½ tsp vanilla

Instructions
 

  • Preheat oven to 350°F. Mix flour, Sucanat, carob powder, salt, and baking powder in a large bowl.
  • In a separate bowl mix the oil, water and vanilla.
  • Combine the wet and dry ingredients until most lumps have disappeared. Pour into grease square pan 8" x 8" x 2" Bake immediately. Bake until toothpick inserted in center comes out clean, about 35 to 40 minutes.
