Vegan Leek And Potato Soup

Creamy hearty vegan soup just the thing to warm a person up.

Ingredients
  

  • cup sliced leeks
  • 2 cup cubed potatoes
  • olive oil
  • 3 cup vegetable stock or water and veggie seasoning to taste Broth Base  would also work
  • salt to taste
  • ½ cup thick soy milk
  • chives to garnish

Instructions
 

  • Heat the olive oil gently in a small pan. Add the leeks and cook until soft. Add the vegetable broth and then add the potatoes. Cook until the potatoes are soft.
  • Add the seasonings. Blend all in the blender and add the milk, blend some more. Return to the stove, warm through and serve with chives sprinkled on top.
