Easy Vegan Tomato Soup

Ingredients
  

  • 1 qt tomatoes
  • 1 6-oz tomato paste, can
  • 1 cup hot water
  • 1 tsp salt
  • ½ tsp oregano
  • ¾ cup cashews
  • 1 onion
  • 1 cup chopped tomatoes
  • ½ cup chopped black olives

Instructions
 

  • Blend the 1 quart of tomatoes and the can of tomato paste together. Pour into large soup pan.
  • Blend the water, cashews, and onion and add to the first 2 ingredients in pan. Add chopped tomatoes and chopped olives.
  • Cook on med/high heat until almost boiling. Serve hot.

Notes

Tips:
Dribble a small amount of sour cream into the center for a real treat.
