Easy Vegan Tomato Soup


  • 1 quart tomatoes
  • 1 6-oz. can tomato paste
  • 1 cup hot water
  • 1 tsp salt
  • 1/2 tsp oregano
  • 3/4 cup cashews
  • 1 onion
  • 1 cup chopped tomatoes
  • 1/2 cup chopped black olives


  1. Blend the one quart of tomatoes and can of tomato paste together. Pour into large soup pan.
  2. Blend the water, cashews, and onion and add to the first two ingredients in pan. Add chopped tomatoes and chopped olives.
  3. Cook on med/high heat until almost boiling. Serve hot.


Dribble a small amount of sour cream into the center for a real treat.
