Easy Vegan Tomato Soup
1 qt tomatoes 1 6-oz tomato paste, can 1 cup hot water 1 tsp salt ½ tsp oregano ¾ cup cashews 1 onion 1 cup chopped tomatoes ½ cup chopped black olives
Blend the 1 quart of tomatoes and the can of tomato paste together. Pour into large soup pan. Blend the water, cashews, and onion and add to the first 2 ingredients in pan. Add chopped tomatoes and chopped olives. Cook on med/high heat until almost boiling. Serve hot.
Dribble a small amount of sour cream into the center for a real treat.
