Vegan Cream of Potato Dill Soup

If you are missing a creamy soup since going vegan look no further. This is an amazing recipe that will leave you satisfied on a cold winters night.

Ingredients
  

  • 3 cup water
  • 4 tsp herbamare seasoning salt
  • cup chopped onion
  • 2 cup potatoes sliced or diced
  • 23 tbsp fresh dill or 1 tbsp dry
  • 3 tbsp olive oil
  • cup flour whole wheat or white
  • 1 tsp salt
  • cup soy milk

Instructions
 

  • Bring water, Herbamare, onion, cooked potato, and dill to a boil. Reduce heat and simmer 10 minutes.
  • Place ⅔ of the mixture in the blender and blend until smooth. Add back to chunky mixture.
  • In a saucepan heat the oil. Add the flour and salt and whisk together. Add the milk and whisk until the mixture is smooth and bubbly and thick.
  • Whisk the flour mixture in with the rest of the ingredients. Bring to a boil and serve hot.

Notes

Tips
Add more potatoes or your favorite vegan sour cream for a thicker soup. Another addition could be some vegan shredded cheddar cheese.
