Vegan Cream of Potato Dill Soup
Ingredients
- 3 cup water
- 4 tsp herbamare seasoning salt
- 1½ cup chopped onion
- 2 cup potatoes sliced or diced
- 23 tbsp fresh dill or 1 tbsp dry
- 3 tbsp olive oil
- ⅓ cup flour whole wheat or white
- 1 tsp salt
- 2½ cup soy milk
Instructions
- Bring water, Herbamare, onion, cooked potato, and dill to a boil. Reduce heat and simmer 10 minutes.
- Place ⅔ of the mixture in the blender and blend until smooth. Add back to chunky mixture.
- In a saucepan heat the oil. Add the flour and salt and whisk together. Add the milk and whisk until the mixture is smooth and bubbly and thick.
- Whisk the flour mixture in with the rest of the ingredients. Bring to a boil and serve hot.
