Add more potatoes or your favorite vegan sour cream for a thicker soup. Another addition could be some vegan shredded cheddar cheese.
Bring water, Herbamare, onion, cooked potato, and dill to a boil. Reduce heat and simmer 10 minutes.
Place 2/3 of the mixture in the blender and blend until smooth. Add back to chunky mixture.
In a saucepan heat the oil. Add the flour and salt and whisk together. Add the milk and whisk until the mixture is smooth and bubbly and thick.
Whisk the flour mixture in with the rest of the ingredients. Bring to a boil and serve hot.
