Apple-Oat Casserole

Ingredients:

  • 2 cups quick rolled oats
  • 1/4 cup non-dairy milk powder
  • 1 tsp salt
  • 1/2 cup fine, unsweetened coconut
  • 2 cups applesauce or shredded fresh apples
  • 2 3/4 cups water
  • 1 Tbsp honey alternative
  • 1 tsp vanilla
  • 1/2 cup raisins

Directions:

  1. Mix all ingredients thoroughly and soak for 30 minutes or overnight.
  2. Bake at 350F in a covered casserole dish for 45-60 minutes.

Tips: 

VARIATIONS: Just before serving, fold in 1 cup of blueberries or blackberries.
