Carob Fudge Pie

This is a rich pie that is smooth and yummy.

Ingredients:

  • 1/2 cup maple syrup
  • 1 Tbsp Roma or Postum
  • 2 tsp vanilla
  • pinch of salt
  • 1 box mori-nu silken tofu
  • 2- 3 cups carob chips
  • 1/4 cup boiling water

Directions:

  1. Blend the maple syrup, Roma, vanilla, and tofu.
  2. Melt the carob chips in a double saucepan and add 1/4 cup boiling water.
  3. Add the carob chips to the blender. Pour into graham cracker lines pie pan, or into foil cupcake lined cupcakes pans. Refrigerate, serve cold. May be frozen for a frozen treat.
