Vegan Apple Crisp
Ingredients
- 1½ oz can apple juice concentrate
- 2 tbsp lemon juice
- ½ tsp ground coriander
- ¼ tsp ground cardamom
- ¼ cup cornstarch mixed with ¼ cup water
- 8 cup sliced, cored apples
- ½ cup raisins
Instructions
- Heat apple juice, lemon juice, cardamom and coriander in a large kettle. Stir in the cornstarch mixture, stirring constantly until thickened.
- Add the sliced apples to the thickened apple juice mixture. Stir in the raisins. Cook two to three minutes stirring constantly.
- Place in pan and top with Crumb Topping. Bake at 350°F for about 45 minutes. (The Crumb Topping recipe is in the breakfast section)
