Vegan Fruit Toast

Ingredients
  

  • 1 can frozen juice concentrate with 1 can water
  • 3-5 tbsp tapioca (quick cook kind)
  • 2 cup frozen berries (blueberries, strawberries, etc.)
  • 2 cup frozen or canned peaches or fruit cocktail

Instructions
 

  • Mix the juice and the tapioca and let stand for 5 minutes.
  • Add the other ingredients and cook until boiling.

Notes

Tips: 
Serve over toast with sliced bananas and nut butters.
