Vegan Shortcake

Ingredients:

  • 1/3 cup canola oil
  • 3/4 cup soy milk
  • 2 Tbsp Sucanat
  • 1 tsp vanilla
  • 2 cup flour
  • 1 tsp salt
  • 3 tsp baking powder

Directions:

  1. Grease and flour a round cake pan. Preheat oven to 375F. Mix wet ingredients and vanilla and Sucanat together.
  2. Combine the dry ingredients together in a mixing bowl.
  3. Quickly mix the wet and dry ingredients together until just blended. Spoon into pan and put in oven. Bake at 375F for 10-12 minutes or until toothpick comes out clean.

Tips: 

Serve with your favorite fruit and cream.
